

Our story
An Italian interlude on the Mauritian coast.
Nestled in La Mivoie, along the Tamarin coast, L'Envol was born from a simple desire: to bring back the artisanal craft of Neapolitan pizza — the kind you share in hushed tones, under a vine, with a glass in hand.
Every dough is hand-kneaded in the morning, ferments slowly (48 hours minimum), then bakes in roaring fire. The essentials come from Italy — San Marzano, fior di latte, Parma prosciutto — and from Mauritius for the rest: fresh herbs, market vegetables, the good taste of home.

The dough
Slow fermentation for 48 hours minimum. Light, flavourful, beautifully digestible.

Italian tomatoes picked in late summer, fresh basil and garlic. Nothing more.
